Cornish Hens with Crab Stuffing
Ingredients
4 (1.5 lbs) Cornish Game Hens
Method
1) Rinse the game hens inside and out and pat dry. Rub the game hens with the lemon; sprinkle salt and pepper to taste.
1 Lemon
1 Clove Garlic
2 Tbsp. Fresh Parsley
1/4 Cup Green Onions
1/4 Cup Celery
1/2 Cup Butter
1 Cup Crab Meat (substitute imitation crab meat if you prefer)
1/2 Tsp. Salt
1 Cup Bread Crumbs (fine)
1/3 Cup Half & Half
2) Chop the garlic, celery, green onions, and the parsley. Saute garlic, celery, green onions, parsley, and butter until tender.
3) Stir in the crab meat, 1/2 Tsp salt / pepper to taste.
4) Stir in the bread crumbs, and then add 1/2 & 1/2 gradually - stirring until mixed
5) Stuff the game hens with the crab meat mixture. Place in a baking pan.
6) Bake game hens at 350 degrees for 45-60 minutes, or until cooked. Baste frequently with pan dripings
7) Serve to greedy children (serves 4)
