Chicken stuffed with Goat Cheese


Ingredients


4 Boneless Chicken Breasts
1 small block goat cheese
1 Lemon
Fresh Herbs (oregano, tyme, sage, etc)
Flour
1 Tbsp. butter
1 Egg

Method

1) Dice spices. Its a good idea to put about 1 Tbsp per spice. Although, some of the stronger spices like tyme - 1/2 that should do.
2) In a small bowl, mix together: Goat cheese, diced spices, butter, and 1 Tbsp lemon juice
3) Take the chicken breasts and cut into the thicker half to create a pocket. You want the entrance to the pocket to be as small as possible - without taking away from the size of the pocket
4) Take the cheese mixture and stuff it into the chicken pockets.
5) Allow to chill in the refridgerator for at least 1/2 hour.
6) Crack egg on a plate and prepare to dredge the chicken in flour.
7) Dredge chicken in flour.
8) In skillet over medium heat, add oil. Place chicken in pan and heat until cooked through.
9) Serve to greedy children
10) Serves 4
