Transistor OFF

The transistor is "off" because the n-type carriers can't get from the source to the drain because the gate region contains majority p-type carriers.

Transistor is ON

The transistor is "on" because a positive charge on the gate repels p-type carriers out of area and attracts n-type carriers can move from source to drain as gate area contains a mojority of n-type carriers!
