Main Dishes

This is a collection of recipes often used in my kitchen, most are from family an friends.
All of these recipes my children eat very well. And if my children don't eat it very well
it did not make my site.


Macaroni and Cheese


4c.elbow macaroni
2Tbsp.margarine
31/2 to 4 c.milk
salt and pepper to taste
small package of velveeta chees
1/2c.cornflakes
Cook macaroni according to package directions.(Do not overcook it will be mushy.)
Drain Macaroni and return to meadium heat, adding margarine,
milk, salt and pepper, cheese. Stir until hot and cheese has melted. you may want
to add more milk or cheese. Mixture will seem runny, but it will thicken when it bakes.
Pour into baking dish and top with cheese slices and crushed cornflakes. Cheese slices
are optional. Bake at 325 degrees for 20 min . Serves 6-8.




Tuna Noodle Casserole

2 cans of tuna drained
116oz pkg eggnoodles
1 large can of cream of mushroom soup
1 16oz pkg frozen peas
Cook noodles as directed on package. Drain water add soup stir untill mixed up well. Then add
tuna and peas cook until peas are thawed. My family's favorite is to top with crushed
potatoe chips.


TatorTot Casserole

1lb hamburger
1large can cream of mushroom soup
1 -16oz pkg tator tots
Brown and drain hamburger,add cream of mushroom soup, and spread in a greased 9x13
pan. Top with tator tots and bake for 30min at 350 degrees.



Mexican Pizza

3pkgs refrigerator bisquits
1-16 oz jar of salsa
1 small onion diced
green pepper diced
1-2lbs hamburger fried and drained
black olives sliced
1lb am cheese
1lb mozzarella cheese
Cut the bisquits into fourths and place in a large bowl ad jar of salsa, ground beef, onion,
green pepper, and olives. Spread into a 9x13 greased pan, top with cheese
and bake for 30 min. or untill brown.

Spaghetti Pizza

3/4lb Spaghetti Cooked & Drained
1 cup milk
2 eggs beaten
1lb Ground beef browned
1-26.5oz can Spaghetti sauce
Optional ingredients: Pepperoni, mushrooms, ripe olives, garlic salt, Spread Spaggetti in a
greased 9x13 pan. Mix milk and egg together and pour over the spaghetti. Mix the
spaghetti sauce into the ground beef and spread on top. Layer
additional toppings on top. Bake 20 min at 350 degrees. take out and cover with 2 cups
grated mozzarella cheese and 1 cup cheddar cheese. Return to oven and bake 10 more minutes.



Cavatini

21/2cups wagon wheel or corkscrew macaroni
12oz italian sausage
3/4 cup onion
2 cloves garlic, minced
1(15 oz)can tomato sauce
1(14oz)jar spaghetti sauce
mozzarella cheese, shredded
1 tsp. Italian seasoning
1/4 tsp pepper
Prepare past, drain, set aside. In large skillet, cook sausage. Drain fat, reserving !tbs of dripping.
Cook onion and garlic in reserved drippings until tender. In 2 quart casserole
dish, combine cooked pasta, sausage and onion mixture; add tomato sauce, spaghettisauce
half of mozzarella cheese, italian seasonings and pepper. Toss gently to combine
Bake covered at 375 degrees for 25 min. Uncover, sprinkle with remaining cheese. Bake 5-10
minutes longer or until heated through.




Beef Stroganoff

1 lb. ground beef
1 can cream of mushroom soup
Garlic to taste
1/2cup onions
1 1/2cup sour cream
salt and pepper to taste
Brown meat with garlic, onions and salt and pepper. Drain any excess grease. Add soup and cook
until heated. Add sour cream and stir. Serve over cooked egg noodles. Grandmas Noodles are the best.




BBQ Meat balls


3lbs hamburger
2 eggs
2cups oatmeal(quick)
1 cup diced onions
1/2tsp garlic salt
1/2tsp salt
1/2 tsp pepper
2tsp chili pwdr
1 can evaporated milk
Mix all ingredients together, form balls and place in 9x13x2 pan
Sauce:
2 cups ketchup
1 1/2 cups brown sugar
2 tbls liquid smoke
1/2 tsp garlic pwdr
1/2 cup diced onions.
Pour over the meatballs and bake for one hour.




Santa Fe Casserole

1 lb ground beef
1 pkg taco seasonings
2 cups chicken broth
1/4 cup flour
1 cup sour cream
1 can diced green chiles
1 pkg corn chips
2cups grated cheese
In medium skillet, brown meat and stir untill crumbly; drain fat ad
taco seasonings blend well. In small bowl, combine broth and flour. Add to meat
mixture; bring to a boil to slightly thicken liquid. Stir in sour cream
and chillies blend well. In 9x13 in greased pan place 1/2 of the chips. Top with 1/2 of
the meat mixture, and 1/2 of the cheese layer again with remaining ingredients
Bake un covered for 20 min at 375 deg. Let stand 5 min before cutting.



Tostada Pie

1lb ground beef
1 medium onion chopped
1 envelope taco sesoning mix
1-8oz can tomato sauce
16 oz can refried beans
4oz can chopped green chilies
1/2 cup sliced olives
1 cup Bisquick
1/2 cup corn meal
1/4 cup milk
1 egg beaten
2 Tbls vegetable oil
1 cup sour cream
1 egg
2cups shredded cheddar cheese
Heat oven to 375 deg. grease 9x13 baking dish. brown ground beef and onions, drain Stir in
seasoning mix, tomato sauce, beans, chilies and olives. Mix bisquick, cornmeal , milk, beaten
egg, and oil until moistened:;beat vigorously 30 seconds. Spread in prepared baking dish.
Spoon beef mixture over dough. Mix remaining ingredients; spoon over beef mixture bake
uncovered for 30 minutes. Let stand 1o min befor cutting.



BBQ Beef


3 pounds boneless chuch roast
1 1/2 cups ketchup
2 Tbls Dijon Mustard
1/4packed brown sugar
1/4cup red wine vinegar
2Tbls liquid smoke flavoring
1/2tsp salt
1/2tsp pepper
1/4 tsp garlic powder
Place Chuck Roast in Crock Pot. Combine remaining ingredients in mixing bowl. Pour Barbeque
sauce mixture over chuck roast. Coover and cook on low 8-10 hours or 4-5 hours on high
Remove Chuck roast from crock pot and shred meat. Place shredded meat back in crock pot.
Stir meat to evenly coat with sauce>



Sloppy Joes


3pounds ground beef
1 cup chopped onion
2cloves garlic
1 1/2 cups ketchup
1 cup chopped green sweet pepper
1/2 cup water
4tbls brown sugar
4tbls mustard
4tbls vinegar
4tbls worcestershire sauce
3tsp chilli powder
In a large skillet brown ground beef, onion, and garlic salt. Cook until meat is brown and
onion is tender. Drain off fat. In crock pot, combine Ketchup, green sweet pepper, water,
brown sugar, mustard, vinegar, worstershire sauce and chili powder. Stir in meatmixture
cover and cook on low 6 t 8 hours or High 3 to 4 Hours.
