While I was cooking dinner one night, I
happened to find this recipe in one of the Southern Living cookbooks. I was looking for a new recipe for
squash because I get tired of the same food all the time! Thankfully, I glanced at this recipe,
decided I’d give it a shot, and let me tell you…it is wonderful!! |

|
|
12 ounces of cream corn (it tastes better if you
use a little more) |
|
2 tablespoons butter |
|
½ small onion |
|
1 pound sliced squash (I use 3-4 squash) |
|
1 cup shredded cheddar cheese |
|
¾ cup breadcrumbs |
|
Parsley (as much as you’d like) |
|
1 egg, beaten |
|
Pepper, garlic, and other desired spices |
|
|
|
|
|
|
Usually, I don’t use a generic brand of cream
corn; however, for this recipe, because it is baked, I use off brands. |
|
As for the onions, use as much as your mouth
craves… |
|
Cheese– in my opinion, cheddar is entirely too
strong. I use Colby Jack shredded
cheese if a recipes requires cheese. |
|

Spices, spices and more spices!! I try not to add too many spices simply
because the true taste of the casserole is masked. |
|
As you will notice, the cooking directions
instruct the onion and squash to be sautéed together; however, I like
onions cooked a bit more…therefore, I sauté the onions for at least 3
minutes, then I add the sliced squash. |

Slice onion and squash |
|
Melt butter in skillet |
|
Sauté onion slices until tender |
|
Add squash to onion, sauté for another few
minutes |
|
|
|
|
|
|
|
|
Turn off heat |
|
Stir corn, squash mixture, cheese and remaining
ingredients together in skillet |
|
Spoon into greased baking dish |
|
Bake at 350 degrees for 50 minutes or until
casserole is set. |
|
|
|
|

stir-fry |

and takes only minutes to prepare! |
