Summer Melon Salad


1 (6 ounce) package strawberry Jell-O
2 cups hot water
3 cups watermelon balls (small)
1 (8 ounce) can crushed pineapple
(drained and washed)
1 cup finely chopped pecans (optional)
1 (8 ounce) tub whipped topping
1/4 cup milk
1/4 cup sugar
1 (8 ounce) package cream cheese


Dissolve Jell-O in water, chill until slightly set, add melon, pineapple and pecans (reserve small amount of pecans to sprinkle on top), chill until firm. Beat cream cheese until fluffy, gradually add milk and sugar, beat until smooth, fold in whipped topping and place on top of Jell-O. Sprinkle with remaining pecans and refrigerate until ready to serve.
