Chicken and Rice Salad
1 package (4.3 ounces) Rice-A-Roni Long Grain & Wild Rice Pilaf
1 tablespoon vegetable oil
2 cups chopped, cooked chicken
2 carrots, sliced lengthwise, cut into slices
1 cucumber, peeled, seeded, cut into short, thin strips
1/2 cup red or green bell pepper,
cut into short thin strips
2 tablespoons sliced green onions
1/3 cup Italian dressing
Prepare rice mix according to package directions,
substituting oil for margarine. Cool 10 minutes.
In large bowl, combine prepared rice, chicken carrots,
cucumber, bell pepper, onions and dressing.
Chill 4 hours or overnight. Stir before serving.
Serve on lettuce-lined platter.
