Green Bean & Potato Salad
1/2 lb. green beans, fresh
1 lb. potatoes, peeled
1/4 c red onion, sliced
1/4 c olive oil
2 Tlb balsamic vinegar
1 Tlb fresh basil, minced
1/2 tsp garlic, minced
salt & pepper to taste
Cook beans and set aside. Slice potatoes into 1/2" slices. Cook until tender. Drain.
Cool potatoes and arrange in a circle on a large platter.
Sprinkle with the salt, pepper and 1 Tlb vinegar.
Add onions, salt, pepper, 1 Tlb vinegar, 2 Tlb oil to the beans and toss.
Pile bean mixture in center of potato arrangement. Sprinkle with basil, oil and garlic.
Let stand 10 minutes.
