Savory Roast Turkey in paper bag
1 turkey (about 12 pounds) fresh or frozen, thawed
1 tablespoon Italian seasoning
2 teaspoons seasoning salt
1 teaspoon dry ground mustard
1 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
2 bay leaves
2 stalks celery
1 onion, quartered
1 orange, whole
1 apple, whole
1 to 2 tablespoons olive oil
Large, clean brown paper bag
Small tin cup or can
Preheat oven to 325F.
Combine first 5 ingredients after turkey;
set aside. Wash turkey and remove giblets.
Place turkey on a rack in shallow baking pan.
Sprinkle 2 teaspoons seasoning mixture inside turkey.
Place bay leaves, celery, onion, orange and apple inside turkey.
Lightly tie legs together to close. Rub oil and remaining seasoning mixture over entire surface of turkey.
Carefully place turkey inside of paper bag
, on rack in roasting pan, leaving space to place metal cup or can filled with 1 cup of water along side or in front of turkey.
Tie paper bag closed with cotton string.
Bake 3 1/2 to 4 hours or until meat thermometer reads 180F in thigh.
Remove from bag, discard can of water, bay leaves, celery, onion, orange and apple.
Let rest 15 to 20 minutes before carving.
