Sausage and onion casserole
250g/ ½ sausages
25g/loz plain flour
250 ml/ ½ pt. water
1 beef stock cube
100g/4oz mushrooms (optiona!)
1 tablespoon tomato puree
Salt and pepper
1 small (8oz) can baked beans
Fry the sausages gently in the melted lard for 10 minutes until browned.
Peel and chop the onion, wash and slice the mushrooms, chop the parsley.
Put the sausages on to a plate and keep them warm. Add the onion to the pan and fry till lightly browned.
Stir in the flour, add the stock, tomato puree, and mushrooms and stir well
Add the sausages and beans. Cover and simmer very gently for 10 minutes. Taste and season, if necessary.
Pour into a serving dish, sprinkle with chopped parsley, and serve with mashed potatoes and vegetables.
