Mince Tarts


175g/6oz butter
175g/6oz cream cheese
Rind of 1 lemon
250g/9oz plain flour
2tsp icing sugar
Pinch of salt
225g/8oz mincemeat
1 small egg, beaten
Icing sugar, to dust


Beat the butter, cream cheese and lemon rind together.
Add the flour, icing sugar and a pinch of salt and stir until the mixture forms as soft dough
. Wrap in clingfilm and chill for 30 mins.
Preheat the oven to 190'C/ 375'F/gas mark 5. Grease two 12 hole patty tins.
Roll the pastry out, cut out 24 rounds and place in the tins.
Fill each with 2tsp mincemeat.
Cut out 48 stars and use to decorate the tarts.
Brush with the egg and bake for 15 ruins. Dust with icing sugar and serve with cream or ice cream.

  • Serves 24: Takes 30mins plus chilling

  • Perfect to make and freeze for weekend guests. Store wrapped in foil for maximum freshness
