  • YOGHURT AND HONEY LOAF

  • Ingredients:

  • 120g soft light brown sugar
    150ml.natural yogurt
    4 level tbsp honey
    90g butter
    240g whole meal flour
    1 level tsp bicarbonate of soda
    2 level tsp cinnamon
    60g chopped nuts
    "two-pound" loaf tin, base lined and greased
  • Method

  • 1. Beat together sugar, egg, and yogurt. 2. Heat butter and honey together. 3. Sift together flour, cinna mon, and bicarbonate of soda: add to honey mixture. Sprinkle in the half nuts. 4. Combine thoroughly with egg mixture. Transfer to tin, level top, and sprinkle rest of nuts over. 5. Bake at Gas Mark2. 300'F/150'C for 1 hour 30 minutes or until top is springy to touch: cool in tin.
