  • 225g.selfraising flour
    tsb. Bicarbonate of soda
    25g.lard
    25g.margarine
    100g. Caster sugar
    orange, grated rind and juice
    175g. Raisins
    milk

  • Method

  • Heat oven to 1 60C, 325F, Gas Mark 3
    Grease and line the base of a 1kg (2 lb) loaf tin.

  • Mix flour and bicarbonate of soda, rubbing fats. Mix in sugar orange rind and raisins. Make the juice of the orange up to pint, with milk and add to the dry ingredients. Mix well. Place the mixture in the prepared tin and bake for about 1 hour, or till you put a clean knife in and it comes out clean, if it come out sticky leave for a few minutes more
