Turkey or Chicken Salad
6 lbs. chicken or turkey, cubed
1 doz. eggs (hard boiled), cut up
2 lbs. seedless grapes
4 lg. cans pineapple chunks
4 (7 oz.) pkgs. macaroni, shells or rings
8 c. celery, chopped
1 1/2 qt. mayonnaise
2 pts. whipped cream
1 1/2 lbs. salted cashews
2 tsp. onion juice
4 tsp. lemon juice
Marinate turkey or chicken overnight in 2 cups French dressing.
In the morning, drain and mix with rest of ingredients.
Mix 1/2 cup cashews into salad and arrange other half on top of salad which is served on leaf lettuce.
