| 225g Self-Raising Flour | 2 teaspoon Baking Powder |
| 150g Soft Brown Sugar | 115g Dried Fig/Date |
| 225g Carrots, grated | 2 Small Ripe Bananas, mashed |
| 150ml Vegetable oil | 2 Eggs |
| 175g Cream Cheese | 175g Icing Sugar |
1. Grease a (14cm x 25cm) loaf tin and place with oil-proof paper.
2. Put the flour, baking powder and sugar into a large bowl and mix well. Stir in the figs /dates.
3. Squeeze liquid out of the grated carrots, and add them to the bowl. Mix in th mashed banana
4. Beet the eggs and oil together, pour them into the mixture.
5. Beat all the mixture with a wooden spoon throughtly.
6. Spoon the mixture into the prepared tin and level top.
7. Cook for 1-11/4 hours, until a skewer pushed into the centre of the cake comes out clean.
8. Remove the cake from the tin and leave to cool on a wire rack.
9. For topping, beat the cream cheese and icing sugar together to a thick icing, and spread on top.
