| 175g Margarine | 350g Self-Raising FLour |
| 125g Caster Sugar | 75g Currants |
| 2 medium eggs | 1/2 teaspoon mixed spice |
1. Place flour in bowl and rub in margarine.
2. Add sugar, spice and currants and mix well.
3. Add eggs and mix to soft dough. Knead lightly and roll out on ligtly floured surface about 1cm thick.
4. Cut into rounds cook on slightly-greased non-stick frying pan until browned on both sides.
