| Russia and Azerbaijan are countries of varied culture and traditions. It is not surprising that their culinary heritage is varied and interesting. Caucasian region, comprising of many states, offers an exciting variety of tasty dishes peculiar to each state. Georgia, for example is well known for its Shashlik, Hachapuri and vine. One dish which has been always associated with Caucas is Shish Kebab, skewered marinated meat grilled over charcoal fire and served with peanut gravy, cucumber and Ketupat (compressed rice). The four main ethnic groups, Russian, Azerbaidjan, Armenian and Georgian have contributed to a unique Caucasian gastronomic heritage. Generally, Azerbaidjanians, Armenians, and Georgians use spices liberally in their food. Russians, on the other hand, are more subtle and have their own distinctive style.
