Veggie Chili Recipe

      1/4 cup chopped onion
      2 cloved minced garlic
      2 tbsp chili powder
      1/4 tsp basil
      1/4 tsp oregano
      1/4 tsp cumin
      2 cups ~ 2 small zucchini finely chopped
      1 cup carrot finely chopped
      1-19 oz. can black beans
      1-19 oz. can red kidney beans
      1-28 oz. can crushed stewed tomatoes
      1-12 oz. can corn


      Finely chop onion, garlic, carrots and zucchini.
      Add these ingredients to an electric fry pan.
      Turn heat on high and add enough water to cook for about 15 minutes without burning.
      Add all other ingredients except the corn.
      Simmer until vegetables are soft.
      Keep adding water to keep from sticking or boiling dry.
      Stir often.
      Add corn.
