1 1/2 pd boneless pork loin, cubed
3/4 cup Jerk Marinade (See Previous Recipe)
1 fresh pineapple, peeled, cored and cut in cubes.
2 green bell pepers, cubed.
12 little pearl onions
Combine the pork and Jerk Marinade in a resealable plastic bag rotate the bag several times to coat the meat with the marinade. Marinade for several hours to coat the meat with the marinade. Fire up the grill. While waiting for the grill to heat, add the pineapple and vegetables to meat and marinade mixture. Skewer the pork and veggies alternately on metal or bamboo skewers. Cook over hot coals for approx. 5 minutes on each side basting occaisionally. Serve hot with rice or just plain.
