Shrimp Croquettes

SHRIMP CROQUETTES

3 TBSP cooking oil,
3 cloves garlic chopped,
1 small onion chopped,
1/4 cup tomato sauce,
1 cup shrimps chopped,
salt and pepper to taste, mashed potatoes ** (see recipe below),
3/4 cup flour, 2 beaten eggs,
1 cup breadcrumbs.

Enough cooking coil for deep frying.

Heat oil and saute garlic.

ur the tomato sauce.
Let it simmer in meduim heat.
Add the shrimps and season with salt and pepper.
MSG (optional).
Cook shrimps well to remove fishy taste.
Set aside on a dish and cool.

Prepare the "MASHED POTATOES."

* * MASHED POTATOES

1 kg potatoes,
2 egg yolks,
4 TBSP butter,
salt and pepper to taste.

Boil the peeled potatoes until soft. Mash.
Add egg yolks and butter. Season with salt and pepper.

Get an egg sized mashed potato mixture .
Put a TABLESPOON of shrimp mixture at the center of the mashed potato and form into an egglike shaped ball. Roll balls in flour and dip in beaten eggs. Then coat with bread crumbs.

Heat oil in deep fryer and deep fry.
