Chocolate truffles :

Ingredients :

Half a large family,ily sized packet of tea biscuits
50g of soft margarine
1small tin of condensed milk
2 heaped tablespoons of drinking chocolate
Chocolate strands/coconut/cases

Method:

Crush biscuits finely
Cream margarine and condensed milk till smooth
Add drinking chocolate and mix well
Add biscuit and mix well
Make into small balls, dip into coconut/chocolate strands
Place in sweet cases and leave to set .


Highland shortbread :

Ingredients :

150g self raising flour
100g soft margarine
50g icing sugar
Demorara sugar for rolling

Method:

Heat oven to gas mark 6/200oC
Sive flour and icing sugar into a bowl
Add margarine and knead until dough is firm
Roll into a sausage shape
Roll in demorara sugar and slice
Place biscuits on baking tray
Bake for 10-15 mins
Leave too cool before moving
