THIS I BELIEVE

My web page has been up for quite some time, but it has always seemed a bit lacking somehow. I thought it might be appropriate to list a few more details about who I am: things I believe in, causes I espouse, my favorite things, etc. So let's start with why I don't eat meat. I think the official term for me would be ovo-pesca vegetarian; meaning I don't eat meat but I still eat eggs, dairy and fish. I dropped beef from my diet somewhere around 1999. Why? Two reasons: first of all, I don't like the idea of some other creature having to die so I can be fed. Second: these days, most animals raised for food are fed (in my opinion) far too many chemicals. These chemicals, when ingested by humans, can create havoc. . September 2005 I also gave up poultry. This was a tough decision because I love the flavor and not being able to have turkey at Thanksgiving seems almost un-American. But once I saw how inhumanely poultry is treated before it's hacked up for my dinner, I knew I had to leave it behind. And as with beef, there are w-a-a-y too many chemicals in poultry.

At some point, I'd like to be able to delete dairy from my diet as well. This has been and continues to be very difficult because I absolutely adore cheese. Once again, the decision to eliminate dairy was twofold: first of all, despite my best efforts, my cholesterol remains high. On the list of items I should try to limit is dairy. In addition, I've been reading a lot about how detrimental cow's milk can be for humans. Again, it's a matter of too many chemicals passing from the cow to me. So what do I eat, you may ask? Good question. It's not always easy. I'm no big fan of tofu. And most meat substitutes don't appeal to me. But I'm finding that Morningstar Farms has several products which are quite good. Quorn is another big favorite. Soy products play a large part in my diet. I'm learning to like soy cheese, yogurt and milk.

I've been anti-leather and anti-fur for longer than I've been pesco-vegetarian.
I won't buy leather shoes, or suede, leather or fur coats.
Here again, it's a case of my not wanting an animal to give up its life for me. Besides, it is possible to wear non-leather shoes

Along the same lines, I won't wear diamonds.
Far too many people have died in connection with the diamond trade.
