TOMATOE POTATOE SCALLOPS


This dish is great for a change. An easy Scalloped Potatoes dish with and tang.

Buttered Casserole dish
Russet Potatoes, thin sliced
½ cup fine diced jalapeno peppers
1 cup Half and Half
½ cup tabasco
Thin sliced tomatoes
cheddar cheese ( I have used all sorts of cheese)
Parmesan cheese
dust with flour about 2 Tbs. spoons


Pre- heat oven 400 degree. Butter dish, place layer of thin 1/16" potatoes. Sprinkle with Parmesan cheese, dust with flour. Place layer of tomatoes, salt, pepper. Sprinkle jalapeno and cheddar. Repeat step. Last layer of potatoes, jalapeno's and cheddar cheese. Mix tabasco and ½ and ½ together and pour over potato mixture. Bake covered for 1 hour. Then uncovered until browned.
