SPINACH with STILTON CHEESE

4 Lb Spinach steamed with rind of one whole lemon. Steam until tender but not mushy. Add salt and pepper to taste (remember Stilton is slightly salty so don’t get carried away). Add only 2 Tlbs. of Lemon Juice. Crumbly 1OZ (or more) of Stilton Cheese and lightly mix in. Serve with Lemon Wedges. Quick easy and great. Serve with most dishes but outstanding with a good pepper cone steak.
