8 Oz. Salt Pork, cut into ½ inch cubes
1 Whole Head of Garlic, minced
1 Large Onion, diced
12 Oz's. White Skinned Potato, peeled and ½ cubed
2 14.5 Oz's. Cans of Chicken Broth or Home made stock (I make most
of my stocks, see my recipe)
2 14.5 Oz's. Water
6 Bunches Greens (collards, mustard, beet, turnip) what ever you
like
In large pot over medium high heat render salt pork until crisp.
Add onions, garlic and potatoes saute until onions are translucent.
Add broth and water, bring to boil. Add Greens. Boil until tender,
about 2 hours.
