JAMBALAYA


2 Tbs olive oil
1 cup diced onions
1-cup bell peppers ( green, yellow, or red)
½ cup diced celery
2 diced hot peppers
1 whole garlic bulb diced
Sauté above for 5 minutes in 6 qt pot
Add:
3 cups diced tomatoes, if you don’t have fresh use canned tomatoes
Simmer for 10 minutes
Add:
1-cup water
1-cup rice
3 bay leafs
½ tsp dried cayenne pepper
1 ½ meat (ham, Cajun sausage, crawfish, turkey, or shrimp)
or use a mixture of above meats.
Salt to taste—if you use ham it could make it to salty
Simmer all on low heat for 30 minutes or until rice is done
Note: If you like it hot –double cayenne pepper
