
Spinach and Artichoke Dip
1 stick butter
1 med onion chopped
2 pkgs frozen chopped shpinach, thawed and well drained
1 (14 oz) can artichoke hearts, drained and chopped
1 (8 oz) pkg cream cheese
1 (8 oz) pkg sour cream
1 cup shredded Monterey Jack cheese, divided
1 cup grated Parmesan cheese, divided
2 tablespoons Tabasco (or to your taste)
Salt to taste
Corn chips or crackers
Melt butter in a large saucepan over medium heat. Add onion and cook until soft. Stir in spinach, artichokes, cream cheese, sosur cream, 3/4 cup each of the cheeses, Tabasco and salt. Stir until well blended and heated through.
Pour mixture into 1/2 quart casserole dish and top with remaining cheeses. Bake in a 350 deg oven until cheese starts to brown about 10-15 minutes. Serve with corn chips and/or crackers.
I like to make things ahead of time for a party so I made this 3 days in advance and took it out of the refrigerator and brought it to room temperature before baking. I think it helped meld the flavors better.
