
Rice Pudding
This can be prepared with regular, low-fat or fat- free milk
1-1/2 cups cooked rice
4 cups milk
1-3oz package Vanilla pudding (cook kind not instant)
4 tablespoons sugar (to taste)
1 tablespoon cinnamon
1/2 cup raisins (optional)
1 teaspoon vanilla
Cook rice as you normally do. Place all ingredients with the
exception of the vanilla in a medium size saucepan. Cook stirring
frequently until mixture comes to a boil. Lower heat to simmer
and cook uncovered, until mixture thickens about 15 minutes. Add
vanilla and cook 10 minutes longer. Remember to stir so it
doesn't stick to the pot.
This can be served warm or cold with a dollop of cream and a sprinkling of cinnamon.
