Crab Stuffed Potatoes
4 large baking potatoes potatoes
1/3 cup butter
1/2 cup light cream
1 tsp. salt
1 Tbsp. grated onion (Vidalia if possible)
1 cup shredded sharp cheddar cheese
1 cup cooked crab meat (fresh if possible)
Bake potatoes in a 400 degree oven until tender.
Cut in half length-wise, and scoop out most of the pulp.
Add butter to potato pulp and mash.
Beat in light cream, salt, onion, and cheese.
Fold in the crabmeat and pile back into the potato shells.
Refrigerate until mealtime.
Sprinkle with a little more cheese.
Reheat in oven at 450 degrees for about 15 minutes.
