Herb-Crusted Ham


1 boneless ham, about 5 lbs 
2 Tbsp. Dijon mustard 
1/4 tsp. coarsely ground black pepper  
1/2 tsp. dried rosemary   
1 1/2 cups fine dry breadcrumbs 
1/2 cup fresh parsley, chopped   
1 Tbsp. olive oil  
1/2 tsp. grated orange rind  
1 Tbsp. orange juice 
1 clove garlic, minced 


In a bowl, combine mustard, pepper, and rosemary.
Rub over surface of ham. 
Toss together breadcrumbs and parsley. 
Whisk oil, orange rind, juice and garlic.
Add to crumb mixture. 
Press crumbs onto mustard coated ham. 
Place in a roasting pan and bake at 325 F for 1 hour 
or until internal temperature reaches 140F. 

Makes 10 to 12 servings.
