Sunshine Pasta Salad

16 oz. (500gms) dried pasta - any shape
1 tsp. turmeric
1 can chopped pineapple, drained - reserve juice
2 chopped tomatoes
1 medium size carrot, grated or finely chopped
1 chopped spring onion
2 Tbsp. chopped mint
1 cup of your choice of the following:  
cooked chicken, shredded 
canned salmon
cooked shrimp, etc.
3 Tbsp. pumpkin seeds
3 Tbsp. raisins or currants

1/2 cup mayonnaise or salad dressing
1/4 cup of the pineapple juice


Cook pasta in boiling water as per package instructions. 
Add the turmeric to the water as it comes to the boil. 
This will color the pasta a golden sunshine color without being spicy.  
Once cooked, drain pasta well. Place in large bowl.
 Add all other ingredients except mayonnaise and juice. 
Toss well.

Mix the mayonnaise or salad dressing with the pineapple juice. 
Pour over pasta mixture and toss through.
Pour into serving bowl and decorate with mint sprigs. 

If wished, serve in small bowls lined with lettuce leaves - 
this makes a complete meal in a bowl.
Cold cooked potatoes, cut into cubes, or cold cooked rice may 
be used in place of the pasta. Rice may be colored yellow with 
the turmeric also.
