Low Fat Creamy Tuna Melt


2 cups celery, diced
1/2 cup onion, chopped
12 oz. can of tuna, packed in water
1 1/2 cups low-fat cottage cheese
1/2 cup reduced-fat mayonnaise
1 Tbsp. lemon juice
1/4 tsp. garlic powder
3 English muffins
1 cup shredded Cheddar cheese


Cook onion and celery is a non-stick skillet 
until the onion is tender, about 2 minutes. 
Drain the tuna and add it to the skillet along with 
the cottage cheese, mayonnaise, lemon juice, and garlic powder. 
Stir well. Cook 2 - 3 minutes, stirring frequently. 
Remove the pan from the heat and set aside. 

Spray a 13 x 9 inch glass baking dish with non-stick spray. 
Split the English muffins in half and place side by side in dish. 
Spread the tuna mixture evenly over the muffins and sprinkle with the cheese. 
Broil until the cheese melts, 2 to 3 minutes. Serve at once. 

If you like your English muffins crunchy, toast them before placing in baking dish.
Makes 6 servings.
