Creamy Herbed Potatoes Ingredients: 12 small new red potatoes 2 tablespoons low-fat sour cream 2 tablespoons minced red onions 1 teaspoon salt freshly ground black pepper to taste 1 tablespoon chopped fresh dill or parsley Preparation: Scrub the potatoes and place in a saucepan. Cover the potatoes with water and bring to a boil. Reduce the heat to medium and simmer until tender, about 10 to 15 minutes. Drain the potatoes well.
