Sweet and Sour Chicken


6 to 8 boneless, skinless chicken breasts cut into strips
1 can pineapple chunks
1 large bottle of spicy French salad dressing
Salt & pepper to taste
Olive oil 
3 cups white rice


In large frying pan, brown chicken strips in 
small amount of oil, no more than 1/4" deep. 
Pour in pineapple, including juice, and dressing 
over the top of the browned chicken. 
Simmer 20 to 30 minutes (check for tenderness of chicken). 
Serve over bed of cooked rice. 
Top with a dash of soy sauce.
