Zesty Italian Meatloaf
1 lb. Ground Sirloin
3 links Mild Italian Sausage
8 oz. can chopped black olives
4 oz. fresh mushrooms
14.5 oz. can diced tomatoes with oregano, basil, and garlic
3 Tbsp. Worcestershire sauce
1 clove of garlic, minced
1 small onion, chopped
Salt & Pepper to taste
Sauté the mushrooms, garlic, and onion, and set aside to cool.
Mix together the ground sirloin, Italian sausage, olives, Worcestershire sauce,
cooled vegetables, 1/4 of the can of tomatoes, and a handful of cheese.
Add salt and pepper to taste.
Cook in a pre-heated oven at 350 degrees, uncovered, for 45 minutes.
Then cover with remaining tomatoes and Mozzarella cheese (as much as you prefer)
and bake for another 15 minutes or until done.
Yields 5-6 servings.
