Turkey Meatballs and Sauce
2 lbs. ground turkey
3 cloves fresh garlic, minced
1/2 medium yellow onion, minced
1/2 cup finely minced Italian Parsley
4 or 5 slices of bread (French is best) soaked in hot water for 5 minutes and drained
1/2 Cup Parmesan Cheese, grated
2 eggs, slightly beaten
Salt and Pepper
for Marinara Sauce:
2 Tbsp. Olive Oil
3 cloves garlic, sliced thin
2 large cans crushed tomatoes
1 small can diced tomatoes
1 bunch fresh basil, leaves only, chopped
1/2 cup chopped Italian Parsley
Salt and Pepper to taste
1/2 tsp. red pepper flakes
Mix all ingredients well.
Form into balls about the size of a ping pong ball.
Spray a baking sheet pan with non-stick spray and place meatballs on the pan.
Bake at 350 degrees for about 20 minutes.
Remove from pan.
Sauté the garlic briefly in the olive oil.
Add all the rest of the ingredients and simmer for 15 to 20 minutes.
Add the baked meatballs to this sauce and simmer for 30 more minutes.
