Beef Alamo

1 lb.beef flank steak
1 medium red onion, finely chopped
1/2 cup hot mustard 2 medium tomatoes, finely chopped
8 to 12 flour tortillas 1 4-oz. can green chili peppers, finely chopped

Score steak diagonally at 1-inch intervals on both sides, making a diamond-shaped pattern. Spread mustard on both sides. Chill, covered, for several hours. Grill steak over medium-hot coals for 8 to 10 minutes on each side. Stack tortillas; wrap in foil. Place on edge of grill to warm. Cut steak into thin slices. Spoon into warm tortillas. Top with mixture of tomatoes, onion and chili peppers. Roll up tortillas. ENJOY
