2 large ripened avocados|
1/3 cup thick & chunky salsa
1 T. lime juice
Peel and mash the avacados. Add salsa and lime juice|
Mix together gently to blend well.
|Mexican Blackeyed Peas|
1 (16 oz). pkg. dried black-eyed peas
1 lbs pork sausage*
1 medium onion, finely chopped
1 (18 oz.) can whole tomatoes, undrained
1/2 cup water
2 T sugar|
2 -1/2 T chili powder
2 T garlic salt
1/4 t pepper
2- 1/2 T finely chopped celery
Sort and wash peas and place in a large Dutch Oven.|
Cover with water 2 inches above peas. Let soak
overnight. Brown sausage in skillet, stirring to
crumble. Add onion, cook until tender.
Drain peas well. Stir into sausage and
add the remaining ingredients.
Bring to boil and cover. Reduce heat and simmer
l -1/2hours, adding water if necessary.
*You may substitute ground beef for sausage.
Spicy Green Beans|
2 cans Italian Green Beans, (drain 1 can)
Brown bacon and onions together. Add beans and tomatoes.
Meatballs In Sweet And Sour Sauce
2 lbs. lean ground beef
1 cup fresh bread crumbs
1/4 cup milk
1 egg slightly beaten
1 medium onion, chopped
1/2 green pepper, finely chopped
1 clove garlic, minced
1 t salt
1/4 t pepper
1- 1/2 t soy sauce
2 T oil
Lightly blend all ingredients
4 cups water
3/4 cup vinegar
1 cup brown sugar
1/4 cup soy sauce
1/3 cup cornstarch
(Cook until almost clear)
1 (13 -1/2 oz.) can pineapple
1 cup celery, sliced
1/2 green pepper, sliced
|Simmer for about 20 minutes. Serve over rice|
Stir Fry Beef|
1 lb. round steak
Creamy Cheesy Mashed Potatoes|
2 pounds (5 to 6 medium) potatoes peeled
Boil potatoes until tender and drain.
. Texas Style Pasta Sauce
1-2 lbs ground beef
2 (15oz) cans of (drained)
(or 10-12 fresh) diced
1 onion (sliced or chopped)
1 coarsely chopped leek
(or 6 green onions)
1 T pureed or finely|
1/4 t cayenne or dry jalapeno
1/2 t thyme
1/4 t sage
1 T parsley flakes
1 cup dry white wine
Salt to taste
Brown meat and drain, add onions just to|
lightly cook them, add spices, stir well.
Add tomatoes, stir until they are mashed
and cooked into consistency desired.
Add liquid and simmer for about 30-40 minutes
or until cooked down to what you want to see.
Delicious with spaghetti, egg noodles,
9 x 13 casserole dish
Sprinkle 1/2 lb UNcooked hamburger on top
