Wild Onions and Eggs




Note: Old folks used crows eggs

After digging wild onions, cut any brown tips. Then wash onions and remove roots. Cut each plant in 1/2" pieces and place in (iron) skillet with heated oil or grease (not too much). Add the chopped onions and cook until they're wilted. Then pour (approximately 4 or 6 beaten eggs over onions. Cook the mixture until fluid (or most of it) is absorbed. Serve while hot (with fry bread is good, but any type is OK).
