- Warm Gingerbread Pudding
- In this recipe, fresh ginger updates an old favorite, Indian pudding, New England's classic cornmeal and molasses dessert. This version is lighter, too, thanks to the egg whites folded in. If you like, use dark molasses for a more intense flavor.

Ingredients - 2-1/2 cups milk
- 1 cup cornmeal
- 1 cup un sulfured molasses
- 2 tablespoons all-purpose flour
- 1 1/2 teaspoons grated fresh ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 3 large eggs, separated
- 1 teaspoon baking powder
- Vanilla ice cream
- Pure maple syrup
Directions - 1. Heat oven to 375 degrees F. Butter a shallow 2-quart baking dish; set aside.
- 2. Combine milk and cornmeal in large saucepan. Bring to boil, whisking. Reduce heat and simmer, stirring constantly, 5 minutes. Remove from heat and whisk in molasses, flour and seasonings; add egg yolks. Whisk in baking powder.
- 3. Beat egg whites in large bowl with electric mixer to soft peaks. Fold whites into cornmeal mixture. Pour into prepared dish. Bake 35 to 40 minutes or until center is just set. Serve warm with vanilla ice cream and maple syrup. Makes 8 servings.

- Parmesan-Turkey Sandwiches
- Keep the ingredients on hand for this hearty sandwich, and you'll be prepared for the next time you need a casual dinner in a hurry.

Ingredients - 1/2 cup cornflakes crumbs or crushed rich round crackers (about 12)
- 1/4 cup grated Parmesan cheese
- 1/8 teaspoon garlic powder
- 1/8 teaspoon pepper
- 1 beaten egg
- 1 tablespoon water
- 4 turkey breast tenderloin steaks (1 pound total)
- 2 tablespoons margarine or butter
- 4 lettuce leaves
- 4 hoagie buns, split and toasted
- 1/4 cup creamy Parmesan or creamy buttermilk ranch salad dressing
- 2 tomatoes, thinly sliced
Directions - 1. In a shallow dish stir together cornflakes crumbs or crushed crackers, Parmesan cheese, garlic powder, and pepper. In another shallow dish beat together egg and water. Dip turkey steaks into egg mixture. Coat with crumbs.
- 2. In a large skillet cook turkey in hot margarine or butter over medium heat for 8 to 10 minutes or until brown and no longer pink in center, turning once.
- 3. Place lettuce on bottom halves of hoagie buns. Top with turkey, salad dressing, and tomato slices. Add bun tops. Makes 4 servings
