Sautéed Zucchini and Apples


I love apples. I love this dish.


1 medium onion, cut into thin wedges
½ teaspoon grated gingerroot
2 tablespoons margarine
2 medium zucchini, cut into 1/4 inch slices
1 medium cooking apple, cored and thinly sliced

Cook onion and gingerroot, covered, in margarine over low heat about 20 minutes or until very tender, stirring occasionally. Uncover and cook over medium-high heat about 10 minutes more. Add the zucchini and apple, stirring gently to coat. Cover and cook 3 to 5 minutes more or until zucchini and apple are tender, stirring often.
