For lack of a better name, I call this Winter Barley! And remember: celery is ALWAYS optional! Yuck!
1 pound lean ground turkey
1/2 cup onion, chopped
1/4 cup carrots, chopped
1/4 cup celery, chopped
1/4 cup green pepper, chopped 2 cloves garlic, minced
1 1/4 teaspoon salt
1/2 teaspoon marjoram
1/2 teaspoon rosemary
1/2 teaspoon thyme
1/8 teaspoon pepper
1 can (15 oz) chopped tomatoes
1/3 cup quick cooking barley
1 1/2 cups water*
In a large saucepan, sauté the turkey, carrots, celery, onions, green pepper, and garlic until the turkey is browned, about 15 minutes. Drain.
Add the remaining ingredients, except the water*, label and freeze.
When preparing to serve, thaw and add 1 1/2 cups water. Simmer 30 minutes covered or until barley is tender. Makes 6 servings.
