Spicy Turkey Bean Chili


I got this recipe from WW's Simply the Best Cookbook. And I didn't change anything! It's good. Oh wait, I didn't put in the green peppers, they're not a favorite of mine! Oh, I also omitted the bay leaves, I didn't have any.


1 pound ground turkey breast
3 green bell peppers, seeded and diced
4 onions, chopped
6 garlic cloves, minced
1 tablespoon ground cumin
2 tablespoons dried oregano
½ teaspoon cayenne pepper
3 bay leaves
1 (28oz) can crushed tomatoes, no salt added
2 (15oz) cans black bans, rinsed and drained
1 (15oz) can fat-free refried beans
1 (4oz) can diced green chilies, rinsed and drained
1 (4oz)can sliced jalapeno peppers, rinsed and drained

Spray a large saucepan with fat-free olive oil cooking spray, Add the turkey, peppers, onions, garlic, cumin, oregano, cayenne, and bay leaves; cook stirring as needed, until turkey is browned and the vegetables are softened, about 6 to 8 minutes.
Add the tomatoes, beans, chilies, and jalapenos; bring to a boil. Reduce the heat and simmer, covered, stirring as needed, until the flavors are well blended, about 45 minutes. Discard the bay leaves.
Makes 12 servings at 3 points each.
