Texas Style Casserole



olive oil cooking spray
2 cups frozen hash brown potatoes
1 can corn and peppers, rinsed and drained
8 ounces Healthy Choice Kielbasa, diced
1/2 cup fat-free milk
1/2 cup egg substitute (or 2 eggs)
1/4 teaspoon table salt
1/4 teaspoon black pepper
3/4 cup reduced fat shredded cheddar cheese

Preheat oven to 350°. Coat a 9-inch square glass baking dish with cooking spray.
Place potatoes and then remaining vegetables in baking dish; top with kielbasa.
Beat together milk, egg substitute, salt and pepper. Pour over kielbasa; sprinkle with cheese.
Bake until casserole is hot and cheese is browned, about 45 minutes.
Serves 6 at 4 points each.
