Spinach Minestrone Soup


I got this recipe from my mom who got it from my aunt who got it from... You get the idea.
It is my favorite soup recipe. It's also good if you add zucchini and other kinds of beans.


1 large onion, chopped
1 garlic clove, minced
4 cups chicken broth
1 (16oz) can kidney beans, rinsed and drained
1 (14.5oz) can diced tomatoes, undrained
2 medium carrots, sliced
½ cup uncooked elbow macaroni
¼ teaspoon dried oregano
1 (10oz) package frozen chopped spinach, thawed

Sauté onion and garlic in a little butter until tender (I usually just use Pam). Add broth, beans, tomatoes, carrots, macaroni, and oregano. Cook until vegetables are tender, about 20 minutes. Stir in the spinach; bring to a boil.
Makes 8 servings.
