South of the Border Pie

I think this would be good with salsa.

1 chopped onion
2 cloves of garlic
2 teaspoons chili powder
1 teaspoon cumin
1/4 teaspoon salt
1 (15 oz) can of red kidney beans, rinsed and drained
1 1/2 cup cooked brown rice
1 cup shredded cheddar cheese
3/4 cup milk
2 beaten eggs

Preheat oven to 350.
Cook onion and garlic in oil. Stir in chili powder, cumin, and salt. Cook 1 minute more. Cool.
Stir in beans, cooked rice, cheese, milk, and eggs.
Grease a 10 inch pie plate. Spoon mixture into pie plate.
Bake for 25 minutes. Let stand 10 minutes.
Makes 6 servings.
