I've only made these once so far but I loved them so they deserve a page! Also, I used wheat germ instead of oat bran. (I didn't have any oat bran). Can those two be substituted? The cookies were great so I guess so!
1 cup whole wheat flour
1 cup oat bran
¾ cup light brown sugar
¾ teaspoon baking soda
½ cup cooked mashed pumpkin
¼ cup maple sugar
2 tablespoons sugar
2 tablespoons finely ground pecans
To make the coating, combine the ground pecans and sugar in a small bowl, set aside.
Combine the flour, oat bran, brown sugar, and baking soda, stir to mix well. Stir in the pumpkin and maple syrup.
Coat a baking sheet with non-stick cooking spray. Roll the dough into 1-inch balls. (If the dough is too sticky to handle, place it in the freezer for a few minutes). Roll each ball into the coating and place on the baking sheet. Use the bottom of a glass to flatten each cookie.
Bake at 300° for 15 minutes, or until lightly browned. Cool the cookies on the pan for about a minute.
