Do you like pumpkin pudding? My friend Kathy says this is better after it's been refridgerated awhile. I agree with her. And, I've heard this is good as a dip (gingersnaps, apple slices...).
15 oz can of pumpkin
2 cups (1 8oz container) fat free cool whip
1 1/2 teaspoons pumpkin pie spice
1 box of fat free vanilla or butterscotch pudding mix (dry)
Mix together with hand mixer. Pour into dessert cups.
Makes 4 servings at 1 point each. (1 cup per serving)
