I don't remember where I got this recipe. But I omitted the raisins! I like pumpkin recipes.
¾ cup canned pumpkin
¼ cup eggbeaters
3 tablespoons water
¼ cup sugar
1 ½ cups reduced fat Bisquick
1 teaspoon pumpkin pie spice
¼ cup raisins
¼ cup brown sugar
1 teaspoon cinnamon
2 tablespoons reduced fat Bisquick
1 tablespoon butter
¼ cup chopped walnuts
Preheat oven to 375°. Spray a 9x9x2 glass pan with nonstick cooking spray.
Mix pumpkin, eggbeaters, and water. Set aside.
Combine sugar, Bisquick, and pie spice. Add to wet ingredients.
Coarsely chop raisins. Fold into bisquick mixture. Spread dough in the prepared pan.
For topping, combine brown sugar, cinnamon, Bisquick, butter, and chopped walnuts until they resemble coarse crumbs. Sprinkle over the top of the cake.
Bake 30 minutes or until knife inserted in middle comes out clean.
Makes 8 servings at 4 points each.
