Potato Chowder


Okay, remember when I said that Spinach Soup recipe was my favorite? Well... maybe this is my favorite soup recipe!
Yum! Yum! Yum!
You can also add ham if you like.


1 cup diced onion
1 cup diced carrots
2 tablespoons flour
3 cups diced, unpeeled potatoes (about one pound)
1 (15oz) can cannellini beans, rinsed and drained
2 (14.5oz) cans chicken broth
¾ teaspoon thyme
½ teaspoon oregano
½ teaspoon salt
¼ teaspoon pepper
4 cups small broccoli florets

In a Dutch oven or large pot, sauté onion, carrots and celery for about 4 minutes. Sprinkle with flour and toss to combine. Add potatoes, beans, broth, 2 cups water, and spices. Stir to combine. Cover and bring to a simmer; let cook until vegetables are tender, about 20 minutes. Stir in broccoli; simmer until bright green, about 5 minutes. Serve garnished with ham and parsley if you like!
Makes 6 servings.
